Instant Pot Lamb and rice has balanced proportions of meat and rice, meaning it has good amounts of protein and considerable amounts of carbohydrates. Sautéed in ghee, the lamb is cooked in good fats and tenderised in juicy tomatoes, and using bone broth to cook the rice. Hence, it has a good fraction of proteins, fats and carbohydrates that make a balanced complete meal.
Ingredients for Instant Pot Lamb and Rice
1 lb Lamb sirloin, small cubes
2 tbsp Ghee
1 tsp Cumin seeds
2 Cardamom pods
2 Cloves
½ inch Cinnamon stick
1 tbsp Paprika
1 tsp Turmeric
1 tsp Ginger paste
1 tsp Garlic Paste
1 tbsp Coriander Powder
1 onion, medium sized, finely sliced
5 tomatoes, finely diced
1 green chilli or Jalapeno pepper, finely sliced
Cilantro, handful
½ lemon, squeezed
2 cups White Rice, long grain (preferably)
1 cup Bone broth
Steps to make Instant Pot Lamb and Rice
Step 1 : Marinate the lamb with Paprika, Turmeric, Ginger and Garlic paste and put it aside. Now, finely slice the onions and tomatoes along with the chilli and cilantro and get the instant pot hot.
Step 2 : Select the ‘Sauté’ option on the instant pot and drizzle the pot with ghee/oil when it reads hot.
Step 3 : Add in all the whole spices (Cumin seeds, Cardamom, Cloves and Cinnamon) to the pot and let it sizzle.
Step 4 : Drop in the sliced onions and wait till they turn golden. (Do not let them turn brown as they may get burnt)
Step 5 : Place the marinated lamb in the pot and sauté for about 5 minutes. Now add in the tomatoes, chilli and cilantro, give a quick stir and close off the instant pot lid. Reset the setting to ‘Pressure Cook’ for about 20 minutes or till the meat tenderises.
Step 6 : After 20 minutes, go back to the ‘Sauté’ setting and let the tomatoes and meat sauté for about 5 minutes.
Step 7 : Add the bone broth to the pot and let it come to a boil. When the broth starts to boil, add coriander powder and lemon juice and mix gently. Add in the rice now.
Step 8 : Set the instant pot to ‘Rice’ setting and let it do its magic!
Step 9 : When the Rice is done, lightly fluff up the rice and mix with meat. Serve hot.
