Ingredients you need to make Mediterranean-Style Baked And Roasted Lamb
2lbs fatty cuts of boneless lamb, big pieces
2 tbsp Ghee (Clarified Butter)
2 tbsp raw onion paste
8 garlic cloves
2 tbsp Lemon juice
1 tbsp Ground Black Pepper
½ tsp Turmeric Powder
1 tsp Cumin Powder
1 tsp Coriander Powder
Few Strands of Saffron
Salt (to taste)
Roasted Almonds (for garnish)
Cilantro (for garnish)
Steps to make Mediterranean-Style Baked And Roasted Lamb
Step 1 : To marinate the meat, add all of the above mentioned ingredients to the large cuts of meat. Cover it and place it in the refrigerator overnight or for at least an hour.
Note: You can make your onion paste in a spice mixer or a grinder, putting ¼ of a medium onion and forming a paste.
Step 2 : Preheat the oven to 360°F. Place the marinated meat in a large baking dish, covering it with an aluminium foil and put it in the oven for an hour.
Step 3 : After the meat has been in the oven for an hour, you will see that the meat has left some water. Now, remove the foil and put it back in the oven for another 30 minutes until all the water has evaporated and the meat has a beautiful roasted colour to it.
Step 4 : Garnish with Roasted Almonds and chopped Cilantro and serve with a salad of your choice.
